Only the films listed, so no Solo, no Rogue One, no ST films since that'd be too easy. Heard this question go out a while back, the original excluded TPM and AOTC purposefully since some fans are quick to say those two are "pointless". But my choice would be Empire Strikes Back. Now before everybody gets heated, lemme explain. I'm thinking of how best to keep the overarching plot of the remaining films intact and it all comes back to ESB on the chopping block. Removing ROTS and jumping straight from AOTC to ANH would be jarring af, not to mention losing some of SW's finest moments. Getting rid of ANH cuts out Luke's, Han's, and Leia's introduction as characters, Obi-Wan's death, and the utilization of the Death Star (imagine all the build-up in the PT only for it to be blown up off-screen and rebuilt for ROTJ), though it's probably a good second choice if ESB was off the table I suppose. Can't get rid of ROTJ since it's the conclusion, the crescendo of Vader's story/redemption, and leaving everything on ESB cliffhanger ending wouldn't be sufficient or satisfactory in the slightest.

By removing ESB (not only gets rid of the annoying snobs in the fandom, but...) the only major plot points that are lost are; Luke's training on Dagobah, Vader's revelation to Luke, Lando's intro, and Han's capture. We've seen Jedi training throughout the PT so we can assume Luke was put through the same rigors by the time ROTJ rolls around knowing Yoda trained him mid-film, by going numerically through the series Vader's revelation was already known to the audience and the dialogue between Luke and Obi-Wan on Dagobah makes up for this, and since Han was already seen having trouble making payments in ANH it'd be very easy to imagine when Han got caught and dragged back to Jabba to fill in the blanks. The only thing left on the cutting room floor is Lando's introduction, but one can assume he's an old friend of Han's who recently joined the Rebel Alliance.

In conclusion, though it's painful to do and to keep the major plot across all six films, I believe ESB is the film that can be sacrificed.
