Yes, I think they have all started in Space.
What I know about it is that originally (way back after Return of the Jedi) George Lucas had ideas about doing 7,8 and 9 but the only thing which was said was that he would have made them much more ‘etherial’, but that was all that was said.
I think George Lucas however, did change his mind a lot. After he did the prequels, he decided that 7, 8 and 9 would not be worth doing because the whole thing was about Anakin. Subsequently on selling the franchise to Disney, before they dispensed with his services, he was going to feature a much younger cast. Also in a Q&A session with JJ Abrams, he asked ‘what was going on with Vader’s Grandchildren’ – note plural, to which JJ replied ‘I dunno George, you wrote this s**t, you tell me!’ so I have reason to believe they would have been significantly different to what we have had so far.

I can’t really say anything about the plot differences, but I think there would be a lot more references. For example there would be twileks, grans, probe droids and mouse droids in the background of certain shots. There could also be a hidden reference of George’s first film THX 1138. The world building would be much more detailed and interesting. I think George would also add those expanding the galaxy lines like: You haven’t been like that ever since we fell into that nest of gundarks, that business on Caito Neimodia doesn’t count, You look like you can rip ears of a gundark or saleucami has fallen and master Vos has moved his troops to Bon Piti. We haven’t really had those lines in the sequels. The only one I remember is you squealed like an oophog and thats in a deleted scene!
